Oatmeal-Chocolate Chip Cookies
Our favorite cookie recipe is sure to please your family and friends
Mini Oatmeal-Chocolate Chip Cookies
1/2 cup margarine (made with vegetable oil)
1/2 cup canola oil
1/2 cup Splenda Brown Sugar Blend, lightly packed
1/4 cup Splenda Blend for Baking
2 large eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 tsp. cinnamon
1/2 teaspoon salt
3 cups old-fashioned oats (not instant)
1 cup mini chocolate chips
Directions:
Preheat oven to 350°.
In a large bowl, blend margarine, canola oil and sugar together until creamy.
Add eggs and vanilla, blend well.
Add remaining ingredients except oats and chips. Mix well.
Add oats and chips and stir well by hand.
Drop dough in quarter-size balls onto ungreased cookie sheet.
Bake 10-12 minutes or until cookies are golden. Note: Watch cookies carefully: When the top is golden and the edges are firm, remove from oven and place on wire rack to cool. Cookies will be a little chewy. For crispier cookies, bake a bit longer.
Makes approximately 4 dozen cookies.
